A Little Help from our Friends

A Little Help from our Friends

If you know my wife (and IT Department) Kris, and I personally, you know things have been financially stressful for us for the past year to year-and-a-half.  And recently we’ve had too many hits at once.  That’s why we’ve started a Go-Fund-Me to get us out of this downward spiral.  This will also help me on my journey from wannabe writer to has been hack in a single lifetime.  Please take a look if you have a moment.

And please share it with others, especially people we may know personally but are not connected to on Facebook.

Thanks,

“You win some, you lose some, and then sometimes you win some you previously lost.  I’m referring to two recipes Dennis had tried that didn’t turn out so well.  Some recipes just don’t work, like the Korian Corn from a few weeks ago.  Others are works-in-progress and need a little tweaking.  Such was the case of the Cheese Enchiladas  https://tastesbetterfromscratch.com/cheese-enchiladas/

and the Homemade Taquitos  https://tastesbetterfromscratch.com/taquitos/

In the case of the Cheese Enchiladas, Dennis used La Victoria enchilada sauce instead of Las Palmas.  Dennis had used La Victoria previously in other recipes.  The flavor and texture after cooking was better.  He also switched out the corn tortillas for flour tortillas.  Aside from preferring flour over corn, it also solved the tearing problem.

The tearing problem was the big issue with the Homemade Taquitos, especially with having to stick a tooth pick through them.  In Dennis’ words, ‘I know corn tortillas are traditional, but flour tortillas taste better and work better without any tearing.  So, screw it.  I’m swapping out corn for flour.  I’m a quarter Mexican, I can do that’.  I find it hard to argue with that.” – Vincent Reinhart
